Vegetable Bibimbap

Prep time: 25 minutes | Cook time: 30 minutes |  Yield: 4 servings
1 cup Quinoa
2 cup Water
1/2 cup We Rub You Original BBQ Marinade
1/4 cup We Rub You Gochujang Hot Sauce
Vegetable oil, as needed
6 cups shredded Kale
1 lb sliced Shiitake Mushroom
4 shredded Carrots
3 cups shredded Purple Cabbage
4 Eggs
Toasted Sesame Seeds and Sesame Oil, optional
Rinse quinoa well then combine rinsed quinoa and water in a saucepan. Bring to a boil then simmer for 15-20 mins. While quinoa is cooking, wash and shred kale, carrots, purple cabbage and mushroom. One medium high heat, add oil and quickly sauté shredded vegetables. Fry up eggs sunny side up. 
To assemble bowl: Place quinoa in a bowl, top off with sauteed veggies and egg, drizzle with We Rub You sauces. Optionally garnish with toasted sesame seeds and drizzled sesame oil. Mix and enjoy!
